PERCH WITH OREGANO

Simple, delicious and quick to prepare

1 kg small, skinless perch fillets or sole fillets
25g
unsalted butter
2 tablespoons chopped fresh oregano
2 tablespoon chopped parsley
4 lemon slices
Salt and red pepper flakes

Preheat a grill (broiler) to high.
Place the fillets in a broiler pan.
In a small saucepan melt the butter and stir in the oregano, pepper flakes and salt. Remove from heat and pour the mixture over the fillets and broil (grill) for 5 minutes on each side. Transfer into a warmed dish. Pour some of the cooking liquid over the fillets and sprinkle some chopped parsley and garnish with lemon slices. Serve immediately.

CREAM CHEESE CHICKEN

This is a most delicious recipe..
It serves four

1 medium size chicken, cut up
2 tbsp melted butter
salt
pepper
2 tbsp dry Italian salad dressing
1 can thick mushroom soup
200 g cream cheese, cut into cubes
1/2 cup dessert wine
1 tbsp chopped onion mix

Brush the chicken with butter and sprinkle with salt and pepper.
Place the chicken in a crock pot and sprinkle dry mix over it.
Cover and cook on low for 6 - 7 hours.

About 40 minutes before it's done, mix the cream cheese, wine, soup and onion in a small saucepan, and cook until smooth.
Pour the mixture over the chicken, cover, and cook for another 40 minutes.
Served with long grain, white rice and sauce.

CREAMED RICE

This pleasant sweet is from an old time recipe.
Serves 6


1/2 cup short grain rice
1 1/2 cups water
4 cups milk
small pinch of salt
2 egg yolks
5 tablespoons sugar
2 teaspoons cornflour
1/4 teaspoon vanilla essence
ground cinnamon

In a thick-based saucepan bring water to boil and add rice. Stir and cook gently, until water is absorbed.
Add milk, salt and bring to the boil, cook gently, uncovered, for 20 minutes stirring occasionally until rice is very soft.
Blend egg yolks with cornflour and little cold milk. Mix in 1/2 cup of the hot creamed rice and return back to the pan. Stir over gentle heat just long enough to thicken. Add sugar and vanilla and mix for a minute.
pour into individual bowls dust with cinnamon and serve warm or chilled.
